Gel stems from the French gélatine (17th century), a clear jelly-like substance or fish broth, and from the Italian gelatine/gelata (jelly), which further derives from gelare (to gel) and the Latin gelare (to freeze). This is also the root of the Italian gelato, or ice cream.

Scottish chemist Thomas Graham is credited with creating the term "gel" through his pioneering work in the field of colloid science (colloid is a mixture in which one substance is divided into minute particles and dispersed throughout a second substance). He discovered that certain substances such as glue and gelatine pass through membranes more slowly than others.

Gel is also sometimes written as "jell," which is a back-formation of "jelly," a semi-soft substance that lacks a defined shape and which shakes slightly when it is moved. As a foodstuff, jelly is the American term for jam, a sweet soft food made by cooking fruit with sugar to preserve it so it can be eaten on bread or cakes. Jell-O (also written without the hyphen as Jello) is a trademark for a dessert made from gelatine, sugar and fruit flavouring, which in German is affectionately referred to as Götterspeise.
