--- WORD ORIGIN This expression is a corrupted version of the old proverb "the proof of the pudding is in the eating," which literally means that you don't know if the pudding is really good until you taste it. In this case, tasting is the ultimate test or proof. Similar expressions are “seeing is believing” and “actions are louder than words”.
Most etymology sources date “the proof of the pudding is in the eating” to around 1600 (though World Wide Words dates it back to the 1300s). It first gained popularity with the publication in 1602 of Don Quixote, Spanish author Don Miguel de Cervantes's classic novel of social humour and political satire.
The book is a treasure chest of proverbs, which in addition to “the proof of the pudding is in the eating”, also includes:
