The adjective staunch is an early 15th century word stemming from the Vulgar Latin "stanticare" (water-tight) by way of the Old French "estanche" and Modern French "étanche." The Latin is also the root of the Spanish estanco (water-tight) and the Italian "stanco" (exhausted, weary).

The connection to the sense of water-tight gave rise to the verb "staunch", meaning to stop the flow of a liquid, and in a more general sense to stop anything from continuing. However, most English language usage books suggest using "stanch" (without the "u") for the verb form, although both are correct.

To understand the modern sense of the adjective, think of the Latin root "stanticare" which ultimately comes from "stans," the present participle of "stare" which means to stand.
