Coleslaw is a uniquely American side-dish whose main ingredient is shredded cabbage. From this point on, the recipes are as varied and wide as the country itself. Some Europeans may know coleslaw from the Kentucky Fried Chicken chain of restaurants. Europeans who have visited any American diner or BBQ restaurant will probably have tried it as well.

The dish and the name were brought to the American colonies by Dutch settlers who sailed to the New York area in the 17th century. The name is an Anglicization of the Dutch "koolsla" (kool = cabbage + sla = salad). Early coleslaw was simply made from cabbage, oil, vinegar, salt and pepper. The Anglicized word was originally spelled "cold slaw" and then changed to reflect its "kool" origins.

We asked our OWAD researcher Dan, an American chap who also happens to hail from Kentucky, about coleslaw. He confirms there as many recipes as there are cars in the United States. His favourite is one that he adapted from his sister's "no recipe" coleslaw, meaning she simply throws together a few things to make the best coleslaw on earth:

Ingredients
1/2 head of white cabbage, shredded
1 large carrot, peeled and shredded
Celery salt
Regular salt
White pepper
Mustard
Mayonnaise (important: use Thomy Delikatess Mayonnaise only!!)

Mix the shredded cabbage and carrots together. Add celery salt, salt and pepper a little at time and mix constantly with the salad. Add 2-3 tablespoons of mayonnaise (Thomy Delikatess only! No Miracle Whip, no substitutes!) and a half tablespoon of mustard. Mix everything together and keep adding mayo, mustard, salt and pepper until it tastes the way you want it. Don't scrimp on the mayo. Coleslaw is supposed to be creamy. Go easy on the mustard though. Too much can overpower everything else.

Coleslaw goes great with grilled meats and fried chicken and fish. For a true American experience, make a sandwich, coleslaw and then add potato crisps and a pickle.
