The wooden frame that slaughtered animals were hung from is known as a bucket. The death spasms of the animals caused them to kick the bucket, therefore the idiom. Death is not a pleasant subject, maybe black humour is some kind of emotional compensation. Here's a small selection from the hundreds floating around the English language:
